Ok, I have a Samsung l8910 (Omnia HD)
and I want an iPhone, but I can’t afford one.
I Was wondering, if it is possible to code my phone so I can install the iPhone software on it? Im pretty sure it has good enough specs to run it, and i am aware that things like iTunes and the app store wouldn’t work on it, but I just love the software. I also realise that this would be an extremely difficult job, but my phone has all the same things my iPhone does
(Like the sensor so it knows which way you’re tilting it)

No your phone cannot run iPhone apps. The problem is different operating systems. Imagine trying to run a Windows program app on a Mac. Now in my example it can be done if an emulator is used, and there are several emulators for the Mac to run Windows software. So it could be possible, but it is unlikely unless someone writes an emulator for your phone.
There is another option and that is to see if someone ports IOS 4 to your phone. Porting means that someone rewrites the basic loading files so that you can run a different operating system on a phone (or computer) than was originally intended to run on that machine. Since the Samsung is using a proprietary operating system and IOS is Apple specific, it is unlikely to get your phone to run IOS so that you can run iPhone apps. A good example of porting is that someone has written a port for Droid that can run on an iPhone. In this case however the operating system are similar since they are both UNIX/Linux based.
